Ready to devour delicious, fluffy pancakes you can eat anytime–without the guilt? This good-for-your body and tastebuds breakfast recipe includes our Muniq Empowerfull Prebiotic Fiber Blend for your batter to give your pancakes a boost of gut-healthing, health transforming healing fiber.

This is the perfect recipe to try if you’re craving some comfort food to start your day–but don’t want a dangerous blood sugar spike,  energy crash, or cravings for more food shortly after. These pancakes will not only get you excited to start your day with a yummy homemade breakfast, but also deliver it with a whopping 18.5g of prebiotic fiber in one serving of 3 pancakes — featuring gut-healthy resistant starch to feed the good bacteria in your gut — and 16.8g of protein to help keep you full.

This super tasty recipe might just be your favorite pancake recipe yet—but is much lower in net carbs than most pancakes (only 10.3 g net carbs per serving compared to about 66g net carbs for a typical pancake). These are a healthy, sugar-free way to get your prebiotic resistant starch fiber in–without sacrificing one of your favorite breakfast staples!

Ingredients:

  • 2 servings Muniq Empowerfull Prebiotic Fiber Blend
  • 1/3 cup + 2 Tbsp almond flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 2 tbsp allulose
  • 1/4 cup unsweetened almond milk
  • 1 whole egg

Directions:

  1. In a medium bowl, whisk together the spooned and leveled almond flour, fiber blend, baking soda, and salt.
  2. In a small bowl, whisk together the allulose, almond milk, and egg.
  3. Stir wet ingredients into the bowl with the dry ingredients until combined.
  4. Pour 1/4 cup of batter onto a heated and greased pan or griddle. Cook on medium-low heat, or 325F, until bubbles form on top.
  5. Cook the pancakes for 1 to 2 minutes per side, turning the heat to low as needed so that the middles cook without burning the outsides.
  6. Serve with sugar-free maple syrup.
